Chris dobson (owner/operator)

Hi & thanks for taking a moment to learn a little more about me.

I am originally from Vancouver, B.C., I moved to Niagara Falls in 2008 to be near my wife’s family when our second son was born.

If truth be told, I have been in the hospitality for over 30 years now.  I have worked mostly in casual, fresh food restaurants, nightclubs, lounges and urban eateries. I am fortunate to have worked with some of the greatest industry leaders on Canada’s west coast. (in My Opinion)  I was a managing partner at Earls Restaurants (Penticton, B.C., 1990-1995), and give credit to the mentors who shaped who I am today, Alan Merriman and Patrick Munson. “ Great food, Great People”  I was the general manager at the Roxy Vancouver (Vance Campbell and Brian Peers, Granville Entertainment) from 1998-2002.

Several wonderful projects and businesses working with local & Provincial governments  I was also an owner of a Country Bar in Maple Ridge British Columbia Called Roosters . Go Country!!!!!!  Of all of the venues along the way, what did I learn?? I know how to fulfill the guest’s needs through indulgence, gratitude and attention to detail.

“There is nothing better than to watch someone discover a new taste or sensation that they didn't expect. That look... when the eyes close… and the guest almost appears to move in slow motion as they truly enjoy that first bite. There is nothing like it!” My life is governed by slogans these days and here are my favorites. They also shape how I run my business.

” Simple but simply amazing”

“Casually upscale in every detail”

“When the tide comes in, all boats rise”

I hope to see you!
Chris

In House Chef Robert Forster

I have been working in the restaurant industry since I was 19, starting as a dishwasher, and grew through the ranks from there, always happy to serve and making people enjoy their dining experience.

Mid way through my career, I had become Kitchen Manager, but I didn’t know how to do the simplest things like making a soup from scratch. So . . . I restarted my career as an apprentice and was completely focused, during my training, on how to create and cook to the best of my ability, focusing on flavour and the combinations there in.

One of the greatest feelings I get now is when I don’t even have to ask a table how their meal was, they look at me a say "that was the best thing I have ever eaten, from start to finish."

Oddly enough, I don’t think I have mastered the craft by any means and I keep pushing myself to ensure your dining experience will be the best ever.

“Do or do not, there is no try”
